Hey hey! Did anyone have a case of the MONDAYS?
Yesterday, my car battery died for the 4th time since August! Thank goodness for AAA… I highly recommend getting a membership if you don’t have one. I have an ’03 Volvo S40, and something has been draining my battery enough that it dies every 30-35 days. Frustrating!
Volvo has been driving me crazy because they haven’t been able to figure out the problem, but they replaced my battery cable today so hopefully that solves this once and for all. Cars are expensive… and you can’t really get around in Atlanta without one!
Anyway, onward and upward… I made TJ’s gingerbread muffins tonight! They’re so simple- you just need one egg, 1/3 c canola oil, and 3/4 cup water. You combine that with the mix and voila! (Lee, I totally just thought of you when I typed that.) They’re baked at 350* for 25 minutes.
I knew that I wanted to bake an acorn squash tonight, but I didn’t know what to do with it. Paula Deen to the rescue!
Elizabeth said that Paula was making acorn squash on her show yesterday, so I loosely followed her recipe. Have you ever had acorn squash?
I took one acorn squash and halved it. I added 1/2 tbs butter and 1/2 tbs brown sugar to each half, with salt to taste. I baked them at 375* for 45 minutes.
So good! I saved half for lunch tomorrow. Easy to eat and a great nutty, fall-like taste to it.
Before I knew it, the muffins were ready! They were perfect after 25 minutes in the oven at 350*.
I may not be able to post every day for the next week or two (I have to let this exam take over my life for now), so I just wanted to let you guys know in case you don’t hear from me.

What are you studying for? I think your last post mentioned that you’d taken the Series 7 last year?

I’m studying for the series 66. I have the 6, 7 and 63… but now I need the 66! I think it’s safe to say that I’ve studied more post-college than I did in college. 🙂
