Hi! Has this week flown by or what?

I had an all day exam prep class (I’m taking the exam in a few weeks) that left me feeling exhausted! It’s so hard to sit through class when you’re used to being all over the place at work… I seriously have a hard time focusing on one thing at a time. Are you guys the same way?

On our break, I stopped at Arden’s Garden for a pick-me-up.



They have a little bit of everything- juice, smoothies, and snacks.

I went for the grand slam today!

  • Wheatgrass
  • Lemon
  • Ginger
  • Cranberry


Wheatgrass is such a wonder- it’s almost instantly energizing.


Ready, set, juice! You hold the wheatgrass juice in your mouth for ~30 seconds before swallowing, then ginger (spicy!), cranberry, and lemon.


I went back to class feeling refreshed, but there’s nothing about state/federal securities laws that keeps me feeling that way!

Once I got home, I halved a spaghetti squash and baked it at 375* for 60 minutes.


When it was finished, I topped one half with marinara sauce, 2 Trader Joe’s turkey meatballs, and parmesan cheese. It definitely hit the spot!



I’m off to find something sweet… pumpkin frozen yogurt, anyone?

Hey guys!

I’m so excited to finally have a blog of my own. I’ve been reading healthy living blogs for longer than I care to admit (let’s just say that the first food blog that I read was Cristin’s Eat Like Me…), and now finally seems like a good time to start my own.

I’m just a regular gal, 25 and living in Atlanta. I cherish the time that I get to spend with my girlfriends, so what better way to start things off than sharing last night’s girls night? My friend just got engaged last weekend, so my roommate (Elizabeth) and I had her and another girlfriend over for dinner.

This is a really old (but all that I can find right now) picture of me, Elizabeth and Lauren…


Elizabeth made spaghetti squash lasagna, which turned out so well. You just halve two spaghetti squashes and bake them for 35 minutes at 350*. From there, you layer the spaghetti squash, marinara sauce, roasted veggies and mozzarella cheese. Repeat until you run out of ingredients, and bake for an additional 30 minutes or so.


It tasted better than it looks!


When I asked the newly engaged gal what she wanted for dessert, she said “something healthy.” Since we were going with a fall theme, I decided to bake a healthy apple crisp. I basically just cut back on the sugar, added oats and used whole wheat flour.

It was delicious and (somewhat) healthy! Is there anything better then a Wednesday night spent with girlfriends and wine? I think not!

I’m off to relax for the night… currently listening to Empire State of Mind (Jay Z and Alicia Keys, love it) and I plan on watching the Real Housewives of Atlanta Reunion.


Which Real Housewives series is your favorite?

I have always liked the Real Housewives of OC, but the Housewives of Atlanta are so ridiculous that I can’t stop watching! I always watch to see where they go, but honestly, they don’t seem to be in the city all that often.
