Pizza Time

Does anyone else love Trader Joe’s pizza dough as much as I do? It’s fresh, convenient, and only 99 cents per bag!

I’ve used their whole wheat dough before, but I prefer their plain dough. It was perfect for a Saturday night at home. I took it out of the fridge and let it sit for about 20 minutes before I rolled it out.

I floured the counter, then set to work at stretching it out with my hands. I topped it with TJ’s pizza sauce, and then added chopped (fresh) spinach before adding mozzarella and ricotta. I used a greased baking sheet and baked it at 350* for ~20 minutes.

I normally follow the baking directions on the bag, but next time I’ll probably bake it at a higher temp for a shorter amount of time.


Either way, it was perfect for a Saturday night in, while watching Miss America and a Lifetime movie. I’m pretty sure that between Elizabeth and I, we have seen just about every Lifetime movie that’s out there. Did I really just admit that? 🙂

Random- Where do you think MTV will film the next season of Jersey Shore? I read that they might be fist pumpin’ in the Hamptons!

Oh, how I love Thursday nights. It feels so good to know that the weekend is so close. 🙂

I love Thursdays even more now that I have Karen’s yoga class to look forward to. I used to take her class at Crunch and I’m so glad that I’ve recently reconnected with her. I enjoy all types of yoga, but I jive with her style of teaching so well.

First off, she’s from South Africa so her accent is so calming. I don’t know if that’s the right way to describe it, but that’s the first word that came to mind.

Second, she’s really in tune with what her students want/need. Her classes are so balanced- challenging, but not so intense that it’s frustrating. She spends probably ten minutes on the final savasana, which I appreciate so much. I definitely fell asleep for a few minutes at the end tonight, but left feeling so refreshed. Yoga nidra, anyone?

Do you practice yoga? If so, what do you love most about it? If not, what is holding you back? I really love the awareness that yoga brings to me- it’s the best strengthening workout I have ever done, yet it also allows me to test my limits and learn so much about myself. Oh, and I can attest to the fact that yoga helps you to sleep better. 🙂

For dinner, I had leftover TJ’s mushroom & cheese flatbread. The flatbread was pretty small- I thought I’d still be hungry after I ate this, but it was surprisingly rich and flavorful.


For dessert, I had a fudgy, under-baked brownie. I used Trader Joe’s version of No Pudge brownies to make these the other night- I can’t remember if they are lowfat or nonfat, but they’re pretty good. I added a carton of vanilla nonfat yogurt & a 1/2 cup of semi-sweet chocolate chips to the mix and baked them for ~20 minutes.

The fact that I didn’t leave them in for long enough makes them even better… 😉

I’m going to make every attempt to go to bed by 11 tonight… I have been staying up way too late lately. At least it’s almost time to sleep in the weekend!

Hi! Happy Bachelor Monday! Is anyone else a Bachelor fanatic like me? Each season just gets more and more ridiculous… like, is this season for real?! Not gonna lie- I’ve already read this season’s spoilers on realitysteve.com. 😉

Monday isn’t so bad when I have yoga + The Bachelor to look forward to. Oh, and TJ’s nonfat greek vanilla yogurt and maple pecan clusters. I love this combo so much that I ate it for breakfast AND lunch today.

I can’t think of the last time that I ate the same thing for two meals in a row. Do you ever do that? Or, are you a creature of habit and eat the same breakfast, lunch or dinner every day?







So, I’m flying out to San Francisco on Wednesday morning. ROAD TRIP- Tobey and I are driving up to Sonoma and Napa from there. We’ll be stopping in Healdsburg, Calistoga and Yountville. This is our third trip there and I couldn’t be more excited. Have you ever been to CA wine country?

I’m bringing my laptop with me so that you guys can come along! 🙂

How is it Sunday already?

I had such a relaxing weekend. I’m watching Keeping Up With the Kardashians right now, and they’re showing Khloe’s wedding. I guess I don’t get it… how can you marry someone after knowing them for a month? Do you guys think that will work? For their sake, I hope it does… but, wow!

So, I went grocery shopping this morning. Lately, I’ve been starting at Trader Joe’s and then stopping at Kroger for whatever else I need. I go grocery shopping every other week and normally spend ~$70; today I spent $66.46. What do you spend on groceries per month?


I knew that I was going to my parents’ house for dinner, so I was tempted to pick up this Kroger pumpkin pie for dessert. $3.99? Something didn’t seem right about that. I looked at the ingredient list and it was like a mile long! Gross.

My mom was making a turkey dinner, so she put me in charge of making frosting for the carrot cake.


Cream Cheese Frosting:

  • 1 pkg (8 oz) Neufchatel (1/3 fat cream cheese)
  • 3 1/2 cups confectioner’s sugar
  • 1/2 c unsalted butter, softened
  • 1 1/4 tsp vanilla

Whenever I go through an “I want a shih tzu” phase, I just rent this little blue & brown-eyed girl for the weekend or when my parents go out of town!
