What a beautiful day! Spring is in the air, is it not? 🙂
After work, I walked to the park and did a (~3 mile) loop around it. I left my ipod at home and did my best to take in the sights & sounds around me (I’m trying to work on being PRESENT. ;)) – people walking their dogs, kids playing baseball, women walking and talking, boot camp, etc.
I stopped at the grocery store on my way home to pick up a few ingredients for tonight’s dinner- Real Simple’s Cheesy Baked Lasagna with Spinach and Artichokes. I don’t really care for artichokes, so I subbed in about 2/3 lb of asparagus for it. Asparagus was $1.99/lb, which I thought was a pretty good deal.
It was full of flavors and textures- cheesy, crunchy, and just overall delicious! The recipe made 4 servings, so I have just the right amount of leftovers. I already packed some up for tomorrow’s lunch.
My sister got me a subscription to Real Simple for Christmas and I love how reasonable (ingredients and cooking time) the majority of the recipes are.
Where do you look for recipes? Cookbook, online, magazines?

I get my recipes from a mix of all three. We get a lot of magazines and work and I’ll copy the recipes into a word file on my computer if they look good.
oh that looks delicious. I’m going to bookmark this recipe! That’s see how long it actually takes me to make it… At least I probably have the ingredients on hand. Good start.
Lately, I am all about the online recipes. When I do the magazine thing, if I don’t make it right away, I just forget about it. 😦
I think it’s awesome that you’re making an effort to be more present. I really need to work on that as well! I feel like I’m always on my iPhone
I have a basic phone for that reason… I know how I am, and I know that I would be a disaster if I had the internet on my phone! I didn’t even use the internet at home until I started my blog… funny, right?
I love the “being present” mention here! I even mentioned it in my blog today cuz it’s what I’ve been trying to work on too!!

I tried to be present a couple days ago. A butterfly landed outside the window of my classroom and usually I’d glance at it and move onto the 20 zillion things on my to do list. But I stopped and just watched it. It was a beautiful little moment in my day. 🙂

What beautiful pictures! I love seeing spring photos from other parts of the country because here in LA we have no seasons!
Real Simple is a great magazine and I love their recipes. Their site is great too! I gets lots of recipes from there as well.
That was a really great idea for you to leave your ipod behind. I run at least 3-4 times a week and would freak out if my ipod were dead and I couldn’t listen to music. But you are absolutely right about being in the present and taking in all of the sights and sounds. Next time I run it will be ipodless!
That looks delicious! I mostly look to blogs and online website, but I have a few cookbooks I turn to regularly like Betty Crocker’s Vegetarian Cookbook.
